A judge at a contest in Waco told me my ribs were "too clean" and it took me 3 weeks to get what he meant
I was at a small backyard contest in Waco back in April and a judge pulled me aside after turn in. He said my ribs looked "too clean," like they came off a picture, and that he could not taste any fire in them. At first I got a little mad, but then it clicked. I had been cooking so careful and tidy that I stripped all the character out of the meat. Now I let a little char happen on purpose and stop fussing over every rack. Anyone else ever get told their cue was too pretty to win?
