My switch from metal to silicone baking mats changed everything
I used to line every cookie sheet with parchment paper for years, tossing out roll after roll. About 6 months ago I bought a set of Silpat mats for $25 at the local kitchen store and I haven't looked back. The cookies come out more even and I don't have to keep buying paper. Has anyone else found their baking improved after ditching parchment for silicone?

... I actually went back to parchment paper after trying silicone mats for a few months. The cookies spread too much on the silicone and got really flat, almost like lace cookies. And cleaning them is a pain... butter and sugar just bake right into the surface and you have to scrub so hard. I ended up tossing my mats.

Oh man totally agree, switching to silicone mats was a total game changer for my baking too!
