Stump grinding vs. removal has me scratching my head
Which one is better for the soil long-term? Can't find a straight answer.

What about my buddy who ground his and now has mushrooms everywhere?

Oh man, that mushroom thing is the real answer right there. Your buddy basically turned his yard into a free all-you-can-eat buffet for fungi. Grinding leaves a whole mess of wood chips that just rots and causes problems for years. At least with removal you just have a hole to fill.
