Update: A DC-10 fuel panel in Phoenix taught me to check the manual first
I was troubleshooting a fuel imbalance on a DC-10 in Phoenix, and I spent an hour tracing lines because the gauges didn't match the selector valve position. Turns out, that specific airframe had a service bulletin that swapped the gauge wiring, which wasn't in our standard job cards. How many of you have run into a mod that completely changed a system's logic from the book diagrams?

Honestly I used to think those old planes were fine. Then I had a flight with constant loud rattling from the overhead bins. It just felt so worn out and cheap. Totally changed my mind on keeping them flying.
