Did you check if anyone was editing from a mobile app? I heard on a podcast about productivity tools that app versions can cause weird sync issues, like dates changing without manual input. For example, my friend's team had a similar thing where deadlines in Asana kept resetting because of a timezone bug in the iOS app. It might be worth looking into which devices people are using. Sometimes these glitches are platform-specific and only show up under certain conditions.
