My cold brew turned into a science experiment over 72 hours in Dallas

I forgot a batch in the back of my fridge during a heat wave and came back to a jar that looked like it was growing its own ecosystem, smelled like a barn. Has anyone else accidentally fermented their brew and should I be worried about the little bubbles, or did I just invent a weird kombucha?
