A buddy at the gas station told me my pour-over method was backwards
I was filling up my rig near Flagstaff and this older guy glanced at my thermos, then told me I should be wetting the filter before the grounds, not after. I tried it this morning and the bloom was way more even, so I guess I owe him a cup of coffee.

Ha, well there you go. That older guy probably knows his stuff (Flagstaff has some serious coffee nerds, honestly). I've always done grounds first then water on the filter, but I'm definitely trying it wet first tomorrow morning. The bloom is the whole point of a pour-over, so if it evens out that's a win. Might owe him a thermos full.

@wyatt771 the coffee thing is just how everything works if you stop and look at it. Wetting the filter first is like oiling a pan before cooking, it's the prep that changes how the whole thing comes out. Same with warming up a car engine before driving hard, or even stretching before a run. People skip steps all the time because they think it's extra work but really it's just getting the setup right so the main event goes smooth. Your buddy at the shop knows that small moves early on save you trouble later.
