Rant: line cook at my new spot in Fresno told me my tasting spoon habit was slowing me down, and I can't stop thinking about it
I moved from a diner to a scratch kitchen in Fresno about 2 months ago and a cook named Marcus pulled me aside after service on Friday. He said I taste every single pan before it goes out and that's why I'm always the last one breaking down my station, sometimes by 25 minutes. I always thought tasting everything was just what a good cook does, but he said he only tastes when he changes a recipe or gets a new batch of something. Now I'm second guessing every plate I send and I don't know if he's right or just faster than me. How do you all figure out when to taste and when to trust your gut on seasoning?
