Hot take: The time a line cook in Seattle called my beurre blanc 'nervous' changed my whole plating style.

He pointed at the tiny bubbles and said it looked scared, so now I only swirl the pan off the heat for a full 30 seconds before I even think about saucing.

That "nervous" beurre blanc thing is a perfect example of how one offhand comment can completely change how you see your own work.

Totally. It makes you wonder how many great dishes get ruined by a single weird word choice.
