Cooking a slow roast in my cast iron Dutch oven taught me the value of patience. Eight hours later, best meal ever.

Gotta disagree, my pressure cooker makes a roast just as good in under two hours!

Speed is nice (who doesn't love saving time?), but flavor suffers in a pressure cooker. Low and slow cooking brings out richer tastes and a better texture. If you have the time, traditional roasting is the way to go.

Look, it's a roast, not a heart transplant. If the meat is tender and tastes good at the end, does it really matter how it got there? I've had great meals from both methods and some bad ones too. The tool doesn't guarantee the result.
