Overheard a pit boss say burnt ends are just scraps, I disagree

Was at Lockhart's BBQ Fest last Saturday and this old timer with a 1000 gallon rig told a newbie that burnt ends are just trimmings, not a real cut. He said true pitmasters toss that stuff. But I've seen places in Kansas City charge $18 a pound for them and sell out by noon. Are we giving scraps a fancy name or is there actual craft in the caramelized fat and bark? Who's side are you on?
