My old boss at the bakery in Boise said to weigh my flour, and I finally did it
When I started out at a small shop in Boise back in 2019, the head baker told me to stop scooping flour and use a scale. I rolled my eyes because I had been baking at home for years and my stuff came out fine. Well, last week I was making a batch of sourdough and decided to finally test it out. I weighed 500 grams of flour instead of my usual 4 cups, and the dough felt completely different. The loaf came out taller and more even than anything I made before. It only took me 5 years to admit he was right. Anyone else have a tip from an old boss that you ignored way too long?
